Fruit and Nut fudge - gluten free

 A great treat or after run snack this has lots of healthy fats and no gluten.  


1 cup of dates
1/2 cup coconut cream
1/2 cup Almond flour
1 cup cacao
3/4 cup coconut oil
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/2 cup raisins
1/2 cup nut of choice, I choose walnuts this time



Place dates in a bowl of boiling water and let them sit for about 10 minutes to soften. Blitz all the ingredients except the raisins and nuts in a blender or food processor.
Then just add in your raisins and nuts and give it a quick blitz to mix, or hand mix them in.

Place into a lined tin and place in the freezer to set. Cut them into small pieces as it's rich enough to satiate any cravings without needing a massive slice.
